The farm is beginning to shift from planting season to harvest season.
While we're still bringing plenty of vegetable, herb, and flower starts to market, some of the first fresh crops of the year are beginning to arrive. This week we're celebrating the opening of the Walker Farmers Market, bringing fresh rhubarb to market, and looking ahead to the first peony bouquets of the season.

Thank you to everyone who stopped by our booth in Park Rapids last weekend. It was wonderful meeting new gardeners, helping customers choose plant starts, and seeing so many familiar faces return for another season.
The excitement continues this week as we prepare to welcome customers at a second market location.
Walker Farmers Market Opens This Week
Tomorrow marks opening day for the Walker Farmers Market, adding a second weekly market stop for Honeydew Farm.
We'll continue attending the Park Rapids Farmers Market each Saturday while also joining the Walker market every Thursday throughout the season.
We'll be bringing vegetable, herb, and flower starts, fresh rhubarb, French Breakfast Radishes, and a small selection of Honeydew Farm goods.

Featured Harvest: Rhubarb
One of the highlights of this week is fresh rhubarb.
With its bright color and signature tart flavor, rhubarb is one of the first harvests that truly signals the arrival of the growing season. We'll have fresh rhubarb available at market this week, making it the perfect time to revisit favorite family recipes or try something new.
Fresh rhubarb won't be around forever, making these early harvests one of the seasonal favorites we look forward to each year.
Alongside rhubarb, we'll continue bringing French Breakfast Radishes to market while supplies last.
Recipe of the Week
Honeydew Farm Rhubarb Crisp
Fresh rhubarb is one of the first harvests that signals summer is on the way. Its bright, tart flavor shines in baked desserts, and this simple rhubarb crisp is an easy way to celebrate the season.
Ingredients
For the Filling:
4 cups fresh rhubarb, chopped
¾ cup sugar
2 tablespoons all-purpose flour
1 teaspoon vanilla extract
For the Topping:
1 cup rolled oats
¾ cup brown sugar
½ cup all-purpose flour
½ teaspoon cinnamon
½ cup cold butter, cubed
Instructions
Preheat oven to 375°F.
In a large bowl, combine rhubarb, sugar, flour, and vanilla.
Spread mixture evenly into a greased 8x8 baking dish.
In a separate bowl, combine oats, brown sugar, flour, and cinnamon.
Cut in the butter until the mixture becomes crumbly.
Sprinkle topping evenly over the rhubarb.
Bake for 35–40 minutes, or until the filling is bubbling and the topping is golden brown.
Allow to cool slightly before serving.
Serve warm on its own or with a scoop of vanilla ice cream.
Flowers Are On the Horizon
One of the things we're most excited about right now is what's coming next.
Our peonies have begun forming buds, and if all goes well, we expect our first bouquets to begin appearing at market in approximately two weeks.
These blooms will soon be finding their way into the hand-tied bouquets many of our customers look forward to each summer.

Several customers asked about our Honeydew Farm apparel during recent markets, so we thought we'd share a quick reminder that our farm-inspired collection is growing too.
We've recently added Honeydew Farm sweatshirts, tote bags, mugs, and other farm-inspired items to our online shop and market booth.
While we'll have a small selection available at market, the full collection can always be found online.
Whether you're looking for a practical market tote or a cozy sweatshirt for cool Minnesota mornings, each item is inspired by life on the farm and helps support what we're building here at Honeydew.
