Recipe of the Week: Crispy Zucchini Fritters with Garlic-Parsley Aioli

Zucchini is one of the most versatile veggies we grow, and this simple fritter recipe is a delicious way to use it while it’s in peak season.

Fritter Ingredients

  • 2 medium zucchini, grated and squeezed dry

  • ½ cup all-purpose flour

  • 1 large egg, lightly beaten

  • 2 cloves garlic, minced

  • 2 tablespoons flat-leaf parsley, chopped

  • ½ teaspoon sea salt

  • ¼ teaspoon black pepper– Olive oil for frying

For the Aioli

  • ½ cup mayonnaise

  • 1 clove garlic, minced

  • 1 tablespoon parsley, chopped

  • Juice of ½ lemon

  • Pinch of salt

Instructions

  1. In a mixing bowl, combine zucchini, flour, egg, garlic, parsley, salt, and pepper.

  2. Heat a thin layer of olive oil in a skillet over medium heat.

  3. Scoop out 2 tablespoons of batter at a time and flatten into a patty.

  4. Fry each fritter for 3–4 minutes per side until golden brown.

  5. While the fritters cook, whisk together the aioli ingredients.

  6. Serve warm, with aioli for dipping.

To keep zucchini fresh and crisp, store it unwashed in a perforated plastic bag in your fridge’s crisper drawer. This improves airflow and prevents early spoilage—lasting up to a week.

  • Trim the stems at a 45° angle before arranging

  • Change the vase water every 48 hours
