Help Us Grow Through Winter: The Honeydew Farm Deep Winter Greenhouse

This week, we’re asking our Honeydew Farm community to be part of something much bigger than a single growing season. Tomorrow, we are launching our GoFundMe campaign to help complete the Honeydew Farm Deep Winter Greenhouse and move this major farm project closer to the finish line.
Work on the greenhouse is moving forward again. Alex recently added another layer of wrap to the structure, and insulation is next. Every step brings us closer to putting this greenhouse to work and extending what is possible beyond Minnesota’s traditional growing season.
But getting it across the finish line is going to take some help.

The greenhouse is being built to give us the ability to continue growing through Minnesota’s coldest months and create new possibilities for the farm beyond the traditional growing season.
We’ve already made significant progress, and seeing the structure take shape has made what we’ve been working toward feel much more real. But there is still work ahead, and getting the greenhouse across the finish line is going to take some help.
Tomorrow, we’ll officially launch our GoFundMe campaign with more information about the project, what remains to be completed, and how your support can help.

From Summer Flowers to Fall Favorites
While work continues on the greenhouse, the changing season is showing up in other parts of the farm too.
We’re busy cutting and drying flowers that will eventually become winter dried-flower wreaths and other seasonal creations. We’re also beginning to plan several classes for the months ahead. The details are still to be determined, but we’ll share more once the plans come together.
And this week, our dried-flower pumpkins will be available at market.
Each white pumpkin is decorated with dried flowers and natural elements, giving some of this summer’s flowers a completely different life for fall. No two are quite the same.
A Visit With a Flower Friend
We also had the chance to spend some time with our friend Kelly this week while she was designing flowers for a wedding.
If you’ve been following along, Kelly may already be familiar. She recently welcomed Honeydew Farm to her place to host two of our classes, and we’ve loved having another local connection where flowers, creativity, and community can come together.
This week, it was our turn to see Kelly in action. She was working on flowers for a wedding and even incorporated a few Honeydew Farm flowers into the designs.
Kelly grows beautiful flowers of her own too, including the dahlias she’s holding in the photo. It was fun to see what she was creating and to watch flowers from both of our gardens find their way into such a special occasion.
From the Honeydew Kitchen
Roasted Zucchini, Cherry Tomatoes & Peppers
Late summer is the perfect time for recipes that let the vegetables do most of the work. This simple roasted vegetable dish brings together several things we’re harvesting right now and can be served as a side dish, spooned over pasta or rice, or saved for breakfast with eggs the next morning.
Ingredients
2 medium zucchini, cut into bite-sized pieces
2 cups cherry tomatoes
1–2 bell peppers, sliced
1 tablespoon olive oil
2 cloves garlic, minced
½ teaspoon salt
¼ teaspoon black pepper
½ teaspoon Italian seasoning
Grated Parmesan, optional
Directions
Preheat the oven to 425°F.
Add the zucchini, cherry tomatoes and peppers to a large baking sheet.
Drizzle with olive oil and add the garlic, salt, pepper and Italian seasoning. Toss until everything is evenly coated.
Spread the vegetables into a single layer.
Roast for approximately 20–25 minutes, stirring once halfway through, until the zucchini and peppers are tender and the tomatoes begin to burst.
Finish with grated Parmesan if desired and serve warm.
Honeydew Farm Tip
If your garden is still producing zucchini, peppers and tomatoes faster than you can use them, now is a good time to preserve some of that late-summer harvest for the months ahead.
Peppers can be sliced and frozen for future cooking. Cherry tomatoes can be roasted or frozen for soups and sauces. Shredded zucchini can also be frozen and saved for breads, muffins and other recipes later.
A little extra work during harvest season means having pieces of the summer garden waiting for you when winter arrives.

There is plenty happening as summer begins giving way to fall.
We’ll continue working on the Deep Winter Greenhouse, cutting and drying flowers for winter wreaths and other creations, and developing plans for several upcoming classes.
